One of the many things writers face when on deadline is hunger. It’s a terrible, terrible thing. You have words to write or fix! You don’t have time for hunger! But your brain needs fuel to function. So, a compromise is in order… How about something quick, easy, and delicious to make your tummy and your brain happy?
Bean and Cheese Quesadillas
1 can beans
1 can corn
1 jar salsa
1 cup shredded cheese
2 flour tortillas
1 Tbs butter or margarine
In medium bowl, mix beans, corn, and salsa until well blended. Microwave until heated through. Place pan on burner and turn on to medium-high heat. Melt butter in pan and place one tortilla on top. Spread cheese over tortilla and melt. Remove first tortilla from the pan and put second one in its place. Spread bean, corn, and salsa mix on tortilla in the pan and place first tortilla cheese side down on top. Cook until tortilla is golden brown. Eat and enjoy!
The mix should be good for a couple of quesadillas. All in all, this recipe takes about 10 minutes to prep and cook. I’m including a printable PDF of the recipe so you don’t have to keep coming back here every time you make it… Though, I don’t mind if you do come back;-)
